COOKIE HACKS AND TROUBLESHOOTING

 

COOKIES MAKE THE WORLD A BETTER PLACE

  1.  Reduce too much spreading

Cookie dough needs resting and chilling put your dough in the fridge before baking to reduce spreading.

2. Give your cookies space

Lay the cookies on the baking tray with about 4cm in between each one so that if they do spread, they will not run into each other.                                                                

3. Cookie Cutter hack

If using cookie cutters, make sure that you dust them in flour before using them so that the dough doesn’t stick.

4. Don’t over bake

Be very careful not to over bake cookies when in doubt go for underdone as they will continue cooking for a short while after they are removed from the oven.

5. Let them cool

Cool your biscuits on a wire cooling rack for even air circulation and so that they can crisp up nicely.

Tough cookies

  • The dough was over-worked.
  • Too much flour was added, weigh your flour precisely.
  • Remember to work the dough as lightly as possible, until the ingredients are just incorporated.

 Flat cookies

  • The dough was overworked.
  • The oven was not hot enough.
  • Too much fat (butter) was included in the mixture.
  • The dough was not allowed to rest or chill.
  • Next time, add a little extra flour, or use a little less sugar and butter, which helps them to rise.
  • Substituting some of your baking soda for baking powder also helps the cookie dough to rise.

Dry cookies

  • Too much flour was added.
  • Dough was over-baked.
  • Not enough fat or sugar included in the recipe.
  • Remember to weigh your flour precisely and check your oven temperature.

Crunchy cookies

  • Too much sugar added.
  • Dough was over-baked.
  • Always under-bake if you’re unsure.

Too Chewy cookies

  • Too much sugar or liquid in the cookies.
  • Add a little extra flour or bake for a little longer.

Crumbly cookies

  • Too much flour added and the cookie dough requires more fat.
  • Reduce the amount of flour by 1–2 Tbsp and add 1–2 extra Tbsp of butter (or whatever fat your mixture uses).
